Title: Caramel Berry Peach Cobbler

This is a variation on a Caramel Peach cobbler that I found on a baking website. The berry portion was a mistake! But a fortunate one.

Ingredients

Cobbler Dough

Fruit filling

Preparation

In a large bowl, mix butter and sugar until creamy. Add the flour, baking powder, vanilla, salt, and milk, and mix until it forms a cake like batter.

In a 12-inch dutch oven, dump in the fruit, and add the sugar, corn starch, cinnamon, vanilla, lemon juice. Mix until the fruit is coated. Pour the caramel over the fruit mixture.

Pour the cobbler batter evenly over the fruit mixture, and cook using 16 coals top heat and 10 bottom heat until the cobbler dough is browned and firm.

A couple of notes for this cobbler - it was originally a recipe meant for a 2 quart baking dish in a regular oven. I doubled the cobbler dough and quadrupled the fruit (it seemed to fit...) but the fruit was too much, so I brought it back to 10-12 cups.

More tweaking may occur...

Sometimes it's easier to be lucky than good!

I think what made it best was what originally disappointed me...when I saw that my berry-peach mix had pineapple, I was upset. But it ended up what really made it GOOD!

With EXTREME apologies to my friend Nate (who I hope will register here soon) I have modified the recipe to reflect:

1) 16 coals top heat and 10 coals bottom heat (both read bottom before), and more importantly:
2) 1/2 cup milk, not 12 cups milk.

Sheesh.

Darren,

How long does it take for this cobbler to take (roughly).  I only have two dutch ovens and I'm thinking of one for bacon cheeseburger meatloaf and the other for potatoes.  I'm just wondering how long after dinner we should plan on waiting for dessert. :)

Well, it's been a while, but I believe it was around 60 minutes. I would check around 40-45 minutes in to be sure. If it's close, monitor it. If it's still pretty liquid, then let it sit for 10-15 more.
