OK let me right up front say that I do not know how many carbs there are per serving, but there can't be a whole lot.
Secondly - this is NOT a healthy dessert. But as a diabetic, this didn't make my blood sugar spike, so there's that.
IngredientsCrust
- 20 Zero Sugar Oreo Cookies
- 1 stick butter
Filling
- 4 8-ounce packages Cream Cheese, room temperature and soft
- 1 cup (or to taste) Swerve powdered sugar substitute
- Zero Sugar Hershey's Chocolate Sauce
- 1 1/2 tsp Vanilla
PreparationPlace the Zero Sugar oreos in a ziplog bag with most of the air removed. Crush them together until they make a paste.
Place a 10-inch dutch oven over a full spread of briquettes. Add the stick of butter and melt. Remove the dutch oven from heat, and add the crushed Oreos. Mix together and press into the bottom of the oven as a crust.
Place the lid on the oven and cook with 8 coals on the bottom and 12 on the top for about 15 minutes - do not go to long, or this will burn.
While the crust is cooking, place the cream cheese into a bowl and mix until smooth. Add the sweetener and mix completely. Slowly drizzle in the chocolate sauce while mixing until fully integrated.
Once the crust is done cooking, let it cool for 15-20 minutes so that it does not melt the filling. Spread the filling over the crust.
Serve.
ResultsI made this up the other day and cooked it with a bunch of youth. I told one of the other adults there that I wasn't openly weeping, but it was a close thing.
