This is a variation on a Caramel Peach cobbler that I found on a baking website. The berry portion was a mistake! But a fortunate one.
IngredientsCobbler Dough
- 2 sticks (4 oz) butter, cut into cubes and at room temperature
- 2 cups sugar
- 2 cups all purpose flour
- 2 tablespoons Baking Powder
- 2 Tablespoons pure Vanilla extract
- 1 teaspoon salt
- 1/2 cup whole Milk
Fruit filling
- 10-12 cups peaches/berries (Fresh, if you have them, frozen if you don't, but if you use frozen, thaw the fruit and drain the juice)
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 2 Tablespoons pure vanilla
- 2 tablespoons fresh squeezed lemon juice
- 1/2 cup Caramel Sauce
PreparationIn a large bowl, mix butter and sugar until creamy. Add the flour, baking powder, vanilla, salt, and milk, and mix until it forms a cake like batter.
In a 12-inch dutch oven, dump in the fruit, and add the sugar, corn starch, cinnamon, vanilla, lemon juice. Mix until the fruit is coated. Pour the caramel over the fruit mixture.
Pour the cobbler batter evenly over the fruit mixture, and cook using 16 coals top heat and 10 bottom heat until the cobbler dough is browned and firm.
