This is delicious with a generous dollop of whipped cream!
Ingredients:- 1 cup miniature marshmallows
- 2 pints fresh strawberries, stemmed and sliced
- 1 3-oz. package strawberry gelatin
- Juice from half a lemon
- 1/2 cup shortening
- 1 1/2 cups sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
Preparation:Sprinkle the marshmallows into the bottom of a 12-inch dutch oven.

In a bowl, combine the sliced strawberries, gelatin powder, and lemon juice. Set aside.

In another mixing bowl, cream the shortening and the sugar.

Add the eggs one at a time, beating well after each addition. Beat in vanilla.

Combine flour, baking powder, and salt. Add to the creamed mixture alternately with milk.

Pour the batter over the marshmallows.
